1 fat, 1 protein & 1.5 carb serving
1 lbs Italian sausage
2 cups white rice
1/2 red bell pepper
1/3 cup diced yellow onion
3/4 cup marinara sauce
1 1/2 cup shredded white cheese (or 6 slice Follow Your Heart dairy free)
Heat oven to 350 and lightly grease 9x13 glass baking dish
While rice is cooking, dice onion and bell pepper.
If Italian sausage is not already ground, cut up links into tiny pieces.
When rice is finished, in a large mixing bowl, combine rice, sausage, bell pepper, cheese and onion. Mix well.
Spread out in baking dish and top with marinara. Bake for 40 minutes
Allow cooling, cut and enjoy!
