1/2 protein & 1/2 fat serving
Makes: 11 Muffins
8 large eggs
4 slices nitrate free bacon
1 medium green bell pepper, diced
1/2 tsp garlic powder
1/2 tsp seasoning of choice (I used Cajun Flavor God)
Cook bacon until about half way done. Do not fully cook; it will finish in the oven.
Chop into bacon bit like pieces (this is the only messy part).
Set oven to 350 and grease muffin pan. I used left over bacon grease.
In a mixing bowl, combine eggs, diced pepper, spices and bacon.
Whisk until the eggs are "scrambled".
Pour 1/4th cup of egg mix into each muffin slot and bake for 20 minutes.
Allow cooling and then wiggle each one out with a knife.
**If pan is well greased, they will not stick. Enjoy!
