1 fat & 1/2 protein serving
1/2 cup spinach
9 thin slices sweet potato, peeled & uncooked
2 slices bacon, nitrate & sugar free
1/4 cup chopped yellow onion
1/2 tsp garlic powder
Dash of salt and pepper
Set oven to 350 and lightly grease 8x8 baking dish.
Layer sweet potato slices across entire bottom of baking dish.
Cut each bacon slice in half and layer on top of sweet potato.
In a bowl, scramble up all eggs. Add remaining ingredients and mix one more time.
Pour mixture over sweet potato and bacon.
Bake for 45-50 until eggs and bacon are fully cooked *Side note: bacon will cook but will not appear crispy as if frying.
Allow to cool and enjoy!
