8 eggs

1/2 cup spinach

9 thin slices sweet potato, peeled & uncooked

2 slices bacon, nitrate & sugar free

1/4 cup chopped yellow onion

1/2 tsp garlic powder

Dash of salt and pepper

 

INSTRUCTIONS

  • Set oven to 350 and lightly grease 8x8 baking dish.

  • Layer sweet potato slices across entire bottom of baking dish.

  • Cut each bacon slice in half and layer on top of sweet potato.

  • In a bowl, scramble up all eggs. Add remaining ingredients and mix one more time.

  • Pour mixture over sweet potato and bacon.

  • Bake for 45-50 until eggs and bacon are fully cooked *Side note: bacon will cook but will not appear crispy as if frying.

  • Allow to cool and enjoy!
