1 fat, 1 carb & 1/2 protein serving
3 TBS almond meal
Dash of cinnamon
Dash of sea salt
1/8 tsp baking soda
1/3 ripe banana, mashed
1 tsp vanilla
In a small bowl, combine all ingredients except banana.
Mash banana and then add to the remaining ingredients.
Transfer mix into a mug and microwave for 1 1/2-2 minutes. The muffin will rise in the microwave and appear to overflow. It is ok, it will shrink when cooled.
Make sure center is completely cooked through, cool and enjoy with about 1/2 TBS of butter.
