3 TBS almond meal

1 egg

Dash of cinnamon

Dash of sea salt

1/8 tsp baking soda

1/3 ripe banana, mashed

1 tsp vanilla

INSTRUCTIONS

  • In a small bowl, combine all ingredients except banana.

  • Mash banana and then add to the remaining ingredients.

  • Transfer mix into a mug and microwave for 1 1/2-2 minutes. The muffin will rise in the microwave and appear to overflow. It is ok, it will shrink when cooled.

  • Make sure center is completely cooked through, cool and enjoy with about 1/2 TBS of butter.
