20 oz. 96% ground beef

1.25 oz. mozzerella balls

1.5 lbs. red baby potatoes

1 TBS olive oil

30 cherry tomatoes

1/2 red onion, diced

5 fresh basil leaves

1 1/2 TBS balsamic vinegar

Sea salt

Black pepper


  • Set oven to 350 and prepare 5 large sheets of aluminum foil.

  • Start by preparing the burgers. Make 5 burgers and stuff 1/4 ounce of mozzerella in the middle of each burger.

  • Next, make bruschetta by cutting cherry tomatoes into fourths, adding diced onion, chopped basil, balsamic and a dash of salt/pepper. Mix well.

  • Finally, quarter cut baby potatoes, add olive oil and sea salt and mix well also.

  • Now, begin forming "hobo packets" by placing one burger in the middle of a single aluminum foil sheet.

  • Follow with 1 cup potatoes and 1/3rd cup bruschetta.

  • Seal up foil to make little packets and cook for 1 hour and 10 minutes.

  • Allow to cool and enjoy or store for meal prep for the week!
