1 protein, 1 carb & 1/2 fat serving
20 oz. 96% ground beef
1.25 oz. mozzerella balls
1.5 lbs. red baby potatoes
1 TBS olive oil
30 cherry tomatoes
1/2 red onion, diced
5 fresh basil leaves
1 1/2 TBS balsamic vinegar
Set oven to 350 and prepare 5 large sheets of aluminum foil.
Start by preparing the burgers. Make 5 burgers and stuff 1/4 ounce of mozzerella in the middle of each burger.
Next, make bruschetta by cutting cherry tomatoes into fourths, adding diced onion, chopped basil, balsamic and a dash of salt/pepper. Mix well.
Finally, quarter cut baby potatoes, add olive oil and sea salt and mix well also.
Now, begin forming "hobo packets" by placing one burger in the middle of a single aluminum foil sheet.
Follow with 1 cup potatoes and 1/3rd cup bruschetta.
Seal up foil to make little packets and cook for 1 hour and 10 minutes.
Allow to cool and enjoy or store for meal prep for the week!
