Per 10 Bites
1/2 carb serving
3 cups steamed cauliflower rice
(can use Steamables for ease)
1 medium white potato, peeled and cooked
1 TBS nutritional yeast
1/2 tsp garlic powder
1/2 tsp parsley, dried
2 TBS buffalo wing sauce
Dash of sea salt
Heat oven to 350 and grease baking sheet- I use coconut oil.
In a large bowl, combine cauliflower rice and cooked potato. Mix until potato is mashed and combined with cauliflower. The cauliflower may begin to mash to which is totally fine and makes it stick better.
Add remaining ingredients and mix until all are well combined and sticky batter is formed.
Scoop out one tablespoon per tot and lightly form small ball. You should end up with 50 tater tots.
Bake for 35 minutes, with the last 2-3 minutes on broil. If your baking sheet is well greased, they should not stick.
Allow to cool and enjoy!
