1.5 protein, 1 carb & 1 fat serving
2 chicken breast, cut in half (should have 4 chicken halves)
1 large sweet potato
1/4 cup cashews
2 TBS Franks Hot Buffalo Wing sauce
Dash of pepper
2 TBS of water
Salt and pepper to season chicken
Lightly season chicken with spices of choice. (The buffalo sauce contains a lot of flavor, so I used salt and pepper only)
Begin cooking chicken any way desired. Sautéed, baked, grilled, etc.
While chicken is cooking, cut sweet potato into about 1/4” slices. You should have 8 pieces about 2” in diameter.
Place sweet potato slices in toaster for about 10 minutes or until browned and soften.
While sweet potato is cooking, combine cashews, buffalo sauce, water and pepper in a food processor or blender. Blend until cashew pieces are crumb like.
Once sweet potato is done, microwave for about 30 seconds to soften a final bit.
Make a sandwich out of 2 potato slices, chicken, desired toppings and 1 TBS sauce. Enjoy!
