1 fat, 1/2 carb & 1/2 protein serving
1 TBS coconut flour
1 TBS vanilla protein powder
1/2 TBS butter or ghee
1/2 TBS peanut or nut butter
1/2 tsp vanilla extract
1 tsp honey
Pinch of sea salt
4 TBS egg white
In a microwave safe mug, heat nut butter and butter for 25 seconds.
When done add all ingredients, with egg whites being last.
Mix all ingredients well until muffin batter is formed.
Smooth top at the end for nice muffin shape. Microwave for 1 minute and 30 seconds.
Allow to cool and enjoy!
*You can top it with more honey, nut butter or regular butter if you'd like.
