Serves 1

1 TBS coconut flour

1 TBS vanilla protein powder

1/2 TBS butter or ghee

1/2 TBS peanut or nut butter

1/2 tsp vanilla extract

1 tsp honey

Pinch of sea salt

4 TBS egg white

INSTRUCTIONS

  • In a microwave safe mug, heat nut butter and butter for 25 seconds.

  • When done add all ingredients, with egg whites being last.

  • Mix all ingredients well until muffin batter is formed.

  • Smooth top at the end for nice muffin shape. Microwave for 1 minute and 30 seconds.

  • Allow to cool and enjoy!
    *You can top it with more honey, nut butter or regular butter if you'd like.
