1 carb & 1/2 fat serving
3 large sweet potatoes, peeled
1 yellow onion, sliced
1 TBS honey
1 TBS olive oil
4 slices nitrate & sugar free bacon
1/3 cup pecan pieces, chopped
Heat oven to 350. Line baking pan with aluminum foil and lightly spray or grease.
After peeling sweet potatoes, cut into bite size pieces and toss with olive oil and sea salt.
Spread evenly across baking sheet and cook for 35-50 minutes with the last 5 minutes on broil.
While sweet potatoes are cooking, dice bacon and sauté on medium heat until grease begins to simmer in pan.
Add onion and cook until onions are caramelized.
When onions are caramelized, add pecan pieces and mix ingredients well. Do not drain bacon grease at any point.
Once potatoes are done, in a large mixing bowl combine with bacon, onion and pecan mixture.
Finally, add honey and mix well one last time. Serve warm and enjoy!
