INGREDIENT LIST

1/3 cup coconut flour

2 eggs

3 TBS egg whites

1/2 cup baby carrots

2 TBS honey

1 tsp vanilla

1/2 tsp nutmeg

Dash of sea salt

2 TBS vanilla protein powder

INSTRUCTIONS

  • Set oven to 350 and grease baking sheet well.

  • In a small mixing bowl, combine all dry ingredients.

  • In a food processor or blender, make carrot paste by first blending carrots until finely chopped.

  • From there, add egg whites and blend until smooth paste is formed.

  • Add paste to dry ingredients.

  • Add full eggs and honey and mix until a cookie dough like batter is formed.

  • Make 12 ping pong size balls out of the batter and bake for 15 minutes.

  • Allow to cool and put on kabob sticks or fun colored straws!
