1/2 carb serving
1/2 head cauliflower
1/2 small yellow onion, diced
2 tsp minced garlic
2/3 cup low sodium chicken or vegetable broth
1/2 large zucchini, half moon slices
2 TBS nutritional yeast
Place cauliflower florets into food processor or blender and blend until rice consistency.
Lightly spray skillet and cook onions and garlic together on medium heat until onions are near caramelized.
When onions are done, add zucchini and cauliflower and saute for about 2 minutes.
Slowly add broth and reduce heat to medium low.
Stir mixture so all contents are mixed with liquid. Cover for about 10 minutes, stirring frequently until all broth is absorb.
You may have a bit of broth that is left, just drain and then add nutritional yeast.
Mix up final product, sprinkle with cracked black pepper and enjoy!
