INGREDIENT LIST

Serves 2-3

 

1/2 head cauliflower

1/2 small yellow onion, diced

2 tsp minced garlic

2/3 cup low sodium chicken or vegetable broth

1/2 large zucchini, half moon slices

2 TBS nutritional yeast

INSTRUCTIONS

  • Place cauliflower florets into food processor or blender and blend until rice consistency.

  • Lightly spray skillet and cook onions and garlic together on medium heat until onions are near caramelized.

  • When onions are done, add zucchini and cauliflower and saute for about 2 minutes.

  • Slowly add broth and reduce heat to medium low.

  • Stir mixture so all contents are mixed with liquid. Cover for about 10 minutes, stirring frequently until all broth is absorb.

  • You may have a bit of broth that is left, just drain and then add nutritional yeast.

  • Mix up final product, sprinkle with cracked black pepper and enjoy!
