1/2 carb & 1 veggie serving
3 cups cauliflower rice, steamed
1 medium white potato, peeled
1/2 tsp paprika
1 tsp garlic powder
1 tsp dried basil
1 tsp sea salt
2 TBS olive oil
To make it easy, I just used the Steamers already riced cauliflower. Steam for about 2 minutes.
Peel and either boil or microwave potato until fully cooked. I did microwave for time saving purposes for about 5 minutes.
Cut potato into smaller chunks and add all ingredients to a blender or food processor.
Blend until smooth mashed potato consistency forms.
Serve warm and enjoy!
