1 protein & 1 fat serving
6-4oz salmon filets
3 medium tomatoes
1/2 tsp paprika
1/2 tsp cayenne (omit if you do not like spicy)
1 cup cherries, no pits
1/2 tsp rosemary
Dash of sea salt
3 TBS red onion, diced
Set oven to 400 and lay out 6 pieces of foil to bake salmon in.
Season salmon with desired spices. We LOVE Flavor God and used the "Taco Tuesday" for this.
Cut tomatoes into fourths, slice jalapeno and place all ingredients (except salmon) in blender. Blend until salsa forms.
**You can do a smoother or chunky salsa.
Lay salmon filets in the middle of each foil sheet and top with 1/3rd cup salsa.
Wrap up into hobo style packets and bake for 18 minutes.
Remove from oven once done, allow cooling and enjoy! So simple, quick and tasty.
