INGREDIENT LIST

3/4 cup almond flour or meal

3 TBS coconut flour

1 egg

1 tsp vanilla extract

2 TBS coconut oil, melted

3 TBS Enjoy Life mini chocolate chips

2 TBS honey

Dash of sea salt

INSTRUCTIONS

  • Heat oven to 350 and line baking sheet with parchment paper and lightly grease.

  • In a large mixing bowl, combine all ingredients except chocolate chips. Mix well.

  • Once batter is well mixed and doughy enough to shape cookies, add chocolate chips and mix again.

  • You can either use a tablespoon to scoop out batter into balls, or flatten out like cookies.

  • Bake for 10-12 minutes. Keep an eye out because almond flour dries quickly.

  • Allow to cool and enjoy!
