1 carb serving
3/4 cup almond flour or meal
3 TBS coconut flour
1 tsp vanilla extract
2 TBS coconut oil, melted
3 TBS Enjoy Life mini chocolate chips
2 TBS honey
Dash of sea salt
Heat oven to 350 and line baking sheet with parchment paper and lightly grease.
In a large mixing bowl, combine all ingredients except chocolate chips. Mix well.
Once batter is well mixed and doughy enough to shape cookies, add chocolate chips and mix again.
You can either use a tablespoon to scoop out batter into balls, or flatten out like cookies.
Bake for 10-12 minutes. Keep an eye out because almond flour dries quickly.
Allow to cool and enjoy!
