1 protein serving
1 lbs. ground chicken
1 cup light coconut milk (in can)
2 cups reduced sodium chicken broth
1/2 green pepper, diced
1/2 cup green onion, chopped
2 cups cauliflower florets
2 tsp minced garlic
1.5 tsp chili powder
1 tsp oregano
Cook chicken with green onion, spices and garlic until chicken is fully cooked.
Add green pepper and cauliflower along with all liquids.
Set stove to low and cook until cauliflower is softened.
Add desired toppings like avocado, cheese or healthy crackers. Simple Mills grain free crackers are pictured.
