1 lbs. ground chicken

1 cup light coconut milk (in can)

2 cups reduced sodium chicken broth

1/2 green pepper, diced

1/2 cup green onion, chopped

2 cups cauliflower florets

2 tsp minced garlic

1.5 tsp chili powder

1 tsp oregano

 

INSTRUCTIONS

  • Cook chicken with green onion, spices and garlic until chicken is fully cooked.

  • Add green pepper and cauliflower along with all liquids.

  • Set stove to low and cook until cauliflower is softened.

  • Add desired toppings like avocado, cheese or healthy crackers. Simple Mills grain free crackers are pictured.
