INGREDIENT LIST

1/2 sweet potato
2 TBS fresh blueberries
1/2 TBS butter or ghee
1/2 tsp coconut oil
1/2 TBS shredded coconut
INSTRUCTIONS

Cook sweet potato until fully done and then cut in half completely to where each half is separated.

Set oven to broil and allow sweet potato to cool.

While sweet potato is cooling, set stove to medium high and heat oil and butter until melted. Add blueberries.

Saute blueberries until they begin to soften and juices begin to form a reduction in oil and butter.

After blueberries are done, mash inside of sweet potato (skin still on) and then top with blueberries and sauce.

Sprinkle coconut on top and broil until coconut is slightly brown. This only takes a couple minutes, so keep watch!

Allow to cool and enjoy!
