1/2 sweet potato

2 TBS fresh blueberries

1/2 TBS butter or ghee

1/2 tsp coconut oil

1/2 TBS shredded coconut


  • Cook sweet potato until fully done and then cut in half completely to where each half is separated.

  • Set oven to broil and allow sweet potato to cool.

  • While sweet potato is cooling, set stove to medium high and heat oil and butter until melted. Add blueberries.

  • Saute blueberries until they begin to soften and juices begin to form a reduction in oil and butter.

  • After blueberries are done, mash inside of sweet potato (skin still on) and then top with blueberries and sauce.

  • Sprinkle coconut on top and broil until coconut is slightly brown. This only takes a couple minutes, so keep watch!

  • Allow to cool and enjoy!
