2 protein, 1 fat & 2 veggie servings
2 lbs. 96% lean ground beef
6-7 cups cauliflower rice or 2 bags Green Giant cauliflower rice
2 large bell peppers
1 TBS olive oil
6 TBS salsa
10 TBS guacamole (I like Wholly Guacamole for convenience)
4 tsp oregano, dried
4 tsp onion or garlic powder
1 tsp chili powder
1 tsp paprika sea salt and pepper
Either heat or saute cauliflower rice until it is soft and cooked through.
Add salsa, 2 tsp oregano and 2 tsp onion powder.
Mix until salsa and spices are well combined in the rice and then set aside.
Fully cook ground beef.
Drain liquid and add remaining oregano, onion powder, chili powder and paprika. Mix with beef for a tasty taco seasoning.
Finally, chop peppers into small, fajita like slivers.
Saute with olive oil, salt and pepper until soft and slightly browned.
Mix all components (beef, rice, veggies) together to make fajita bowls.
Top with 2 TBS guacamole per bowl and use a healthy chip for your nachos.
