INGREDIENT LIST

Serves 5

2 lbs. 96% lean ground beef

6-7 cups cauliflower rice or 2 bags Green Giant cauliflower rice

2 large bell peppers

1 TBS olive oil

6 TBS salsa

10 TBS guacamole (I like Wholly Guacamole for convenience)

4 tsp oregano, dried

4 tsp onion or garlic powder

1 tsp chili powder

1 tsp paprika sea salt and pepper

INSTRUCTIONS

  • Either heat or saute cauliflower rice until it is soft and cooked through.

  • Add salsa, 2 tsp oregano and 2 tsp onion powder.

  • Mix until salsa and spices are well combined in the rice and then set aside.

  • Fully cook ground beef.

  • Drain liquid and add remaining oregano, onion powder, chili powder and paprika. Mix with beef for a tasty taco seasoning.

  • Finally, chop peppers into small, fajita like slivers.

  • Saute with olive oil, salt and pepper until soft and slightly browned.

  • Mix all components (beef, rice, veggies) together to make fajita bowls.

  • Top with 2 TBS guacamole per bowl and use a healthy chip for your nachos.
