GUILT FREE CINNAMON
1/2 protein & 1 carb serving
1/4 cup Bob's Red Mill Paleo baking flour
1 TBS unsweetened applesauce
1 TBS egg white
3/4 tsp sugar
1/4 tsp cinnamon
1 TBS vanilla protein powder
1/8 tsp apple cider vinegar
Dash of salt
1/2 tsp baking powder
In a small ramekin or bowl, combine flour, baking soda, salt, applesauce, egg white, apple cider vinegar and 1/2 tsp sugar. Mix well.
You will not technically be "rolling" this batter, so it should not be thick to do so. Evenly flatten out batter in bowl.
Before sprinkling on top, mix remaining 1/4 tsp sugar and cinnamon. Sprinkle on top of batter.
Microwave for 1 minute.
While cooking/cooling, make protein frosting with 1 TBS vanilla protein and water. Add water slowly until thick frosting is formed. This is about 1/2 TBS of water give or take.
Remove "cinnamon roll" from bowl, top with frosting and enjoy! Eat it warm for max amazingness.
