INGREDIENT LIST

2 lbs extra lean pork tenderloin
1 cup diced pineapple, juice included
1 tsp garlic powder
1/2 tsp cumin
1/4 cup reduced sodium chicken broth
1/4 cup coconut aminos
1/2 small yellow onion, diced
INSTRUCTIONS

Set your crockpot to set hours you would like lean meat to cook.
**Pork tenderloin is as lean as chicken breast, so set to what you normally cook chicken breast at depending on your time. I set mine to quick cook, and did it in about an hour. -
Place pork tenderloin in crockpot. Sprinkle one side with 1/2 tsp garlic powder and 1/4 tsp cumin. Flip and repeat on opposite side.

Pour remaining ingredients in the crock pot and mix well. Try to make sure some onion and pineapple are on top of tenderloin.

Cook until pork tenderloin is done enough to remove and shred.

Shred pork tenderloin and replace back in crock pot with ingredients.

Mix again, allowing all liquid to cover pork tenderloin.

Finish cooking until pork tenderloin is fully done.

Allow to cool and enjoy! It is best to strain out the pineapple and onion and put it on top of the meat when eating.
