1 lbs tilapia
25 Simple Mills crackers
1 tsp paprika
Dash of sea salt
1 TBS olive oil
Make "breading" by blending crackers, salt and paprika together until crumbs form. Put on a plate or bowl large enough to dip sticks in.
In another bowl, mix egg for dipping before coating with bread crumbs.
Cut tilapia filets into 4 strips each, for a total of 16 fish sticks.
Lightly coat each fish stick in egg and then breading. Set aside.
Finally, spread 1 TBS olive oil around in large saute pan or large cooking skillet.
Place as many fish sticks as possible to begin "frying."
Once fully cooked on one side (fish is white), flip and finish cooking on the other. **You may need to do this in two batches and just add another 1/2 tablespoon of olive oil.
Once done, set aside to cool and enjoy! Be careful when flipping. Tilapia can get flaky.
