1 protein, 1 carb & 1 fat serving
2 corn tortillas
2 TBS cheese or 1 slice FYH
1 TBS guac or 25g avocado
1/2 tsp coconut oil
Begin making tortillas by melting coconut oil on medium heat in pan. Immediately place tortillas in pan allowing them to crisp on each side.
Once tortillas are done, set aside and begin cooking eggs in same greased pan to over-easy or over-medium.
When almost done, place 1 TBS cheese on each egg until melted.
Put one egg on each tortilla and top each with 1 TBS salsa, hot sauce and avocado to finish. Enjoy!
