3 pounds chicken breast

1/4 cup lite coconut milk

1/4 cup 33% less chicken broth

1 cup peas

2 TBS nutritional yeast

2 cups cauliflower, steamed

1 tsp dried basil

1 tsp minced garlic

5 slices bacon Black pepper to taste


  • Place chicken and chopped bacon in crockpot or instant pot.
    **If using crockpot, use "meat" setting on High; it took mine 2.5 hours. **If using Instant pot, set "Manual" time for 13 minutes. Allow 7 minutes of "Natural" release.

  • Cook until chicken is done and then shred in pot so juices are INCLUDED.

  • While chicken is cooking, make carbonara sauce. Add coconut milk, broth, steamed cauliflower, nutritional yeast, basil, garlic and black pepper to blend or food processor and blend until smooth, thick sauce is formed.

  • Once chicken is done and shredded, add peas and sauce and mix well. DO NOT drain chicken and bacon liquid, this adds to the flavor.

  • Enjoy immediately or store for a week of meal prep!
