INGREDIENT LIST

1/2 cucumber (slices cut in to 4)

1/2 tomato

1/2-1 TBS olive oil

1 tsp balsamic vinegar

2 TBS chopped scallion

Dash of salt and pepper

Top with crushed red pepper

Top with fresh basil, chopped

INSTRUCTIONS

  • Slice cucumber in to single slices and then cut each single slice in to four.

  • Chop half tomato in bite size pieces. Do not dice; it gets to watery.

  • Add remaining ingredients except red pepper and basil.

  • Toss ingredients together and add more olive oil if needed and used only 1/2 tablespoon.

  • Top with crushed red pepper and fresh basil and enjoy!

  • Refrigerate for later serving.
