1/2 fat & 1/2 carb serving
1/2 cucumber (slices cut in to 4)
1/2-1 TBS olive oil
1 tsp balsamic vinegar
2 TBS chopped scallion
Dash of salt and pepper
Top with crushed red pepper
Top with fresh basil, chopped
Slice cucumber in to single slices and then cut each single slice in to four.
Chop half tomato in bite size pieces. Do not dice; it gets to watery.
Add remaining ingredients except red pepper and basil.
Toss ingredients together and add more olive oil if needed and used only 1/2 tablespoon.
Top with crushed red pepper and fresh basil and enjoy!
Refrigerate for later serving.
