1 protein & 1/2 fat serving
2 pounds 95% ground beef
2 baby red potatoes, thinly sliced
1 cup spinach
1/2 TBS olive oil
1/2 tsp oregano
1/2 cup marinara
1/2 cup shredded mozzarella ?
(2 slices FYH cheese for dairy free)
1 tsp minced garlic
1 tsp garlic powder
Salt and pepper to taste
Set oven to 350 and lightly grease loaf pan.
Thinly slice potatoes (don’t use ends) and toss with spinach, oregano, olive oil and sea salt until well coated.
Season beef with minced garlic, garlic powder, a little salt and pepper. Mix in egg for binding.
Firmly press half of the ground beef into the bottom of the loaf pan.
Top with a layer of the potato and spinach mix.
Layer other half of beef on top of the potato mix and make sure beef is enclosing the potatoes on the sides. This will help them not fall out when cutting at the end, but is ok if they do; it will still taste yummy.
Bake for about 45 minutes or until beef appears done.
Top with marinara and then cheese and place back in the oven for a couple minutes to let cheese melt.
Allow cooling, slice and enjoy!
