2 cups cooked quinoa

1/2 cup garbanzo beans, drained

1/2 large zucchini

1 tsp minced garlic

3 slices bacon, chopped

1/4 cup Italian dressing

INSTRUCTIONS

  • Begin by cooking quinoa.

  • While quinoa is cooking, cut zucchini slices into fourths and sauté with chopped bacon and minced garlic.

    • Cook all until bacon is fully done. ​

  • When bacon is done cooking, pour mixture (bacon grease included) into a large mixing bowl.

  • Add 2 cups cooked quinoa and 1/2 cup garbanzo beans. Mix well.

  • Finally, mix in 1/4 cup Italian dressing.

  • Serve immediately or can be stored for 5 days as meal prep. Enjoy!
