2 cups cooked quinoa
1/2 cup garbanzo beans, drained
1/2 large zucchini
1 tsp minced garlic
3 slices bacon, chopped
1/4 cup Italian dressing
Begin by cooking quinoa.
While quinoa is cooking, cut zucchini slices into fourths and sauté with chopped bacon and minced garlic.
Cook all until bacon is fully done.
When bacon is done cooking, pour mixture (bacon grease included) into a large mixing bowl.
Add 2 cups cooked quinoa and 1/2 cup garbanzo beans. Mix well.
Finally, mix in 1/4 cup Italian dressing.
Serve immediately or can be stored for 5 days as meal prep. Enjoy!
