2-15 oz cans corn (no salt added)

2 large red bell peppers

1/3 cup red onion, chopped

1/2 tsp garlic powder

1/2 tsp paprika

4 oz. goat cheese

3 slices bacon, chopped 

1/4 tsp salt 

Pepper to taste 



  • Set oven to broil and begin cooking chopped bacon pieces and onion in skillet. Fry until close to crispy, but not fully done. 

  • In a large mixing bowl, combine drained corn, red pepper, bacon (grease included) and onion. Mix well.

  • On a large baking sheet, spread out corn mixture and cook on broil until roasted and lightly charred. All ovens are different, so I just kept my eye on them. I would say around 10-15 minutes

  • Remove from oven and put back into large mixing bowl. Add goat cheese and spices while still hot.

  • Mix well one more time and enjoy! Can also be refrigerated and served cold.
