2-15 oz cans corn (no salt added)
2 large red bell peppers
1/3 cup red onion, chopped
1/2 tsp garlic powder
1/2 tsp paprika
4 oz. goat cheese
3 slices bacon, chopped
1/4 tsp salt
Pepper to taste
Set oven to broil and begin cooking chopped bacon pieces and onion in skillet. Fry until close to crispy, but not fully done.
In a large mixing bowl, combine drained corn, red pepper, bacon (grease included) and onion. Mix well.
On a large baking sheet, spread out corn mixture and cook on broil until roasted and lightly charred. All ovens are different, so I just kept my eye on them. I would say around 10-15 minutes.
Remove from oven and put back into large mixing bowl. Add goat cheese and spices while still hot.
Mix well one more time and enjoy! Can also be refrigerated and served cold.
