INGREDIENT LIST

1 pepper

 

1 bell pepper

¾ cup steamed cauliflower

2 TBS salsa

¼ avocado, diced

Dash of paprika

Dash of cayenne (if you like it hot)

½-1 slice bacon, (depending on pepper size) nitrate free

2 toothpicks or 1 kabob stick

INSTRUCTIONS

  • Fire up the grill or set oven to 350.

  • Cut top off pepper and remove seeds/core.

  • Line the bacon around the inside of the pepper and secure with toothpicks or kabob stick.

  • Grill or cook pepper until bacon is cooked and pepper begins to brown.

  • While pepper is cooking, rice your steamed cauliflower and then add all remaining ingredients. Mix thoroughly.

  • Once pepper is done cooking, remove toothpicks and stuff cauliflower rice mixture into the center of the pepper.
