1/2 carb & 1/2 fat serving
1 bell pepper
¾ cup steamed cauliflower
2 TBS salsa
¼ avocado, diced
Dash of paprika
Dash of cayenne (if you like it hot)
½-1 slice bacon, (depending on pepper size) nitrate free
2 toothpicks or 1 kabob stick
Fire up the grill or set oven to 350.
Cut top off pepper and remove seeds/core.
Line the bacon around the inside of the pepper and secure with toothpicks or kabob stick.
Grill or cook pepper until bacon is cooked and pepper begins to brown.
While pepper is cooking, rice your steamed cauliflower and then add all remaining ingredients. Mix thoroughly.
Once pepper is done cooking, remove toothpicks and stuff cauliflower rice mixture into the center of the pepper.
