Per 3 energy bites (fruit not included)
2/3 cup rolled oats
1 tsp vanilla extract
1/2 cup peanut butter
Dash of sea salt
1 tsp cinnamon
2 TBS mini chocolate chips
1 TBS honey
Fruit of choice
7 kabob sticks
In a large mixing bowl, begin by mixing all ingredients except fruit and mini chocolate chips.
It will be tough at first, but make sure oats really get mixed well with peanut butter so they are not too sticky.
Add mini chocolate chips and mix well one last time.
To make each energy bite, scoop out 1/2 TBS batter and roll into a little ball. Set aside until all 21 are made.
Time to use that fruit! Grab your kabob stick and put one energy bite on, then 2-3 pieces of fruit.
Alternate until 3 energy bites are on one kabob stick.
Either eat right away or store in refrigerator.
