1 protein & 1/2 fat serving
1 lbs chicken breast tenders
3 TBS almond meal
1 TBS olive oil
1 tsp garlic powder
1.5 tsp oregano, dried
1 tsp basil, dried
Pinch of sea salt
1 TBS egg white
Heat oven to 425 and line baking sheet with lightly greased aluminum foil or glass baking dish without foil.
To make paleo breading, mix almond meal, garlic powder, oregano, basil and sea salt together.
Coat chicken with egg white. Sprinkle half of breading mixture on one side of the chicken. Flip and sprinkle the rest on opposite side.
Heat olive oil in a skillet big enough to quickly sear chicken. Add chicken and cook about 1-2 minutes on each side. They should only be lightly browned.
Transfer chicken to baking sheet/baking dish and cook for 15 minutes until fully done.
Allow to cool and enjoy!
Side note: If you want these with more breading, times the breading recipe by one and half.
