1 lbs chicken breast tenders

3 TBS almond meal

1 TBS olive oil

1 tsp garlic powder

1.5 tsp oregano, dried

1 tsp basil, dried

Pinch of sea salt

1 TBS egg white


  • Heat oven to 425 and line baking sheet with lightly greased aluminum foil or glass baking dish without foil.

  • To make paleo breading, mix almond meal, garlic powder, oregano, basil and sea salt together.

  • Coat chicken with egg white. Sprinkle half of breading mixture on one side of the chicken. Flip and sprinkle the rest on opposite side.

  • Heat olive oil in a skillet big enough to quickly sear chicken. Add chicken and cook about 1-2 minutes on each side. They should only be lightly browned.

  • Transfer chicken to baking sheet/baking dish and cook for 15 minutes until fully done.

  • Allow to cool and enjoy!
    Side note: If you want these with more breading, times the breading recipe by one and half.
