INGREDIENT LIST

Makes 2 Large Pancakes

 

1 large ripe banana

1/2 tsp vanilla extract

1/2 tsp cinnamon

2 large eggs

1/2 tsp baking powder to fluff

 

INSTRUCTIONS

  • Mash banana until smooth and there are no visible chunks.

  • Combine and whisk with remaining ingredients until you have a consistent batter like the image below.

  • Lightly grease skillet set to medium high heat.

  • Pour half of the batter in the skillet to form a large circle. Feel free to make smaller sized pancakes if you'd like. We just made two giant ones.

  • Once the batter begins to look fluffy, flip and cook until firm.

  • Grease pan again and repeat for second pancake.
