1 carb & 1/2 fat serving
Makes 2 Large Pancakes
1 large ripe banana
1/2 tsp vanilla extract
1/2 tsp cinnamon
2 large eggs
1/2 tsp baking powder to fluff
Mash banana until smooth and there are no visible chunks.
Combine and whisk with remaining ingredients until you have a consistent batter like the image below.
Lightly grease skillet set to medium high heat.
Pour half of the batter in the skillet to form a large circle. Feel free to make smaller sized pancakes if you'd like. We just made two giant ones.
Once the batter begins to look fluffy, flip and cook until firm.
Grease pan again and repeat for second pancake.
