1 protein, 1 fat, 1/2 carb & 1 veggie serving
1 lbs. grass-fed, 93% beef
3 zucchini or 4 cups spaghetti squash
2 tsp dried oregano
4 tsp minced garlic
1 tsp garlic powder
3 TBS almond meal
1 cup marinara
1/4 cup yellow onion, diced
8 small pepperoncini
Spiralize zucchini with skin on and boil until al dente.
Drain and allow to dry
On medium high heat, spray skillet lightly and saute minced garlic, onion and pepperoncini until onion is translucent.
Add meat and cook until almost fully done.
Add marinara, sea salt, garlic powder and oregano.
Once all is fully cooked and mixed well, add almond meal to thicken.
You can either top zucchini noodles with meat sauce or mix zucchini noodles in saute pan with sauce (that is what we did). Enjoy!
