PIZZA STUFFED CHICKEN
2 protein & 1/2 fat serving
1 1/2 lbs chicken breast
2 slices mozzarella cheese
3/4 cup marinara sauce
1/4 cup fresh basil, chopped
1/2 cup pineapple, diced
16 slices pepperoni, regular size
Salt & Pepper
Set oven to 400 and spread 1/4 cup marinara sauce on bottom of 9x13 baking dish.
Butterfly chicken breast and stuff each with 1 TBS basil, 2 TBS pineapple and 4 pepperoni. Fold back up and secure with toothpicks.
Season lightly with salt, pepper and garlic powder on each side.
In baking dish, top chicken with remaining 1/2 cup sauce and bake for 30-40 minutes or until chicken is done.
Finally, after fully cooked, top each chicken breast with 1/2 slice cheese and put back in the oven until cheese is melted. This only takes a couple minutes. Bon Appétit!
