INGREDIENT LIST

Serves 12

Crust: 

2 cups granola

1 egg

1 egg white

Fill:

2/3 cup unsweetened applesauce

1 small banana

4 tsp vanilla

1/4 cup honey

4 eggs

1/2 cup egg whites

1/3 cup almond flour

3/4+2 TBS coconut flour

1 tsp cinnamon

Dash of sea salt

1/2 tsp baking powder

2 cups popcorn

2 TBS mini chocolate chips

INSTRUCTIONS

Crust:

  • Set oven to 350 and grease glass pie dish well. Make sure sides are greased too.

  • Begin by blending granola into fine crumbs.

  • Manually stir in one egg and one egg white until sticky dough forms.

  • Pat dough flat into glass baking dish only on the bottom. Do not put on the sides like other pies.

  • Bake for 15 minutes.

Filling:

  • While crust is baking, mix coconut and almond flour with 4 eggs and half cup egg whites. 

  • Add all remaining ingredients except popcorn and chocolate chips. Continue mixing until banana is no longer clumpy.

    • **You can do these first 2 steps in blender or food processor too.

  •  ​Finally, hand mix in popcorn and chocolate chips.

  • Spread batter over granola crust and bake for 40 minutes.

  • Allow to cool and then make sure edges are removed well from baking dish. Cut and enjoy! 

    • Goes great with a little whipped cream on top!
