8 ounces shrimp
8 ounces chicken breast
1.5 links Aidell's Cajun Andouille sausage
4 cups cauliflower rice
1 1/2 cups celery, diced
1 red bell pepper, diced
1 28 oz. can crushed tomato
1/2 green bell pepper, diced
1/2 yellow onion, diced
1 tsp paprika
1/2 tsp cumin
1/4 tsp cayenne
Dash of sea salt Black pepper to taste
1 1/2 tsp minced garlic
Dice all vegetables and put them into pressure cooker or crockpot.
Peel shrimp, dice chicken into bite size and cut sausage into half moon pieces. Place into pot as well.
Add all spices and crushed tomatoes to vegetable and meat mixture.
Finally, add cauliflower rice (you can use one Green Giant Steamables bag to equal 4 cups) and mix all ingredients.
Set pressure cooker for about 30-40 minutes. Cook until chicken is fully done.
Allow to cool and enjoy!
