8 ounces shrimp

8 ounces chicken breast

1.5 links Aidell's Cajun Andouille sausage

4 cups cauliflower rice

1 1/2 cups celery, diced

1 red bell pepper, diced

1 28 oz. can crushed tomato

1/2 green bell pepper, diced

1/2 yellow onion, diced

1 tsp paprika

1/2 tsp cumin

1/4 tsp cayenne

Dash of sea salt Black pepper to taste

1 1/2 tsp minced garlic

INSTRUCTIONS

  • Dice all vegetables and put them into pressure cooker or crockpot.

  • Peel shrimp, dice chicken into bite size and cut sausage into half moon pieces. Place into pot as well.

  • Add all spices and crushed tomatoes to vegetable and meat mixture.

  • Finally, add cauliflower rice (you can use one Green Giant Steamables bag to equal 4 cups) and mix all ingredients.

  • Set pressure cooker for about 30-40 minutes. Cook until chicken is fully done.

  • Allow to cool and enjoy!
