1/2 fat & 1/2 carb serving
1 large spaghetti squash, cooked
2.5 oz (1/2 pack) Applegate pepperoni, diced
5 oz. mozzarella (fresh is best)
1 cup green bell pepper, chopped
1 cup yellow onion, chopped
1 cup marinara sauce, sugar free
1 tsp dried basil
1 tsp garlic powder
1/2 tsp minced garlic
Heat oven to 350 and cook spaghetti squash for 45 to an hour depending on size.
After spaghetti squash is prepared, mix with pepperoni pieces, pepper, onion, spices, garlic and sauce.
Place in a 9x13 baking dish and bake for 15 minutes still at 350.
Remove from oven and place mozzarella on top of casserole (like the picture above) and bake until melted.
Allow to cool and enjoy!
