1/2 carb serving
1/2 cup gluten free flour (can use regular)
2 TBS unsweetened applesauce
1 tsp vanilla extract
30g vanilla protein
2 TBS maple syrup
1 TBS coconut flour
1/2 tsp sugar
1 1/4 tsp cinnamon
1/4 tsp baking powder
Pinch of salt
Set oven to 350 and lay baking sheet with parchment paper. Grease with cooking spray.
In a small mixing bowl, begin by mixing all dry ingredient, except sugar and 1/4 tsp cinnamon. Save that.
Next, add in all wet ingredients and mix well. Make sure coconut flour is not clumpy and fully mixed in. Batter will be sticky.
Scoop out 1 TBS per cookie and put on baking sheet. They do not need to be perfect ball shapes or flattened.
In a separate small bowl, mix 1/4 tsp cinnamon and 1/2 tsp sugar for topping. Sprinkle on top of cookies.
Bake for 8 minutes, then remove cookies from baking sheet still on parchment paper and allow to cool. Enjoy!
