1/2 carb serving
3/4 cup pumpkin puree
1/4 cup egg whites
1 tsp vanilla extract
Pinch of salt
1/3 cup coconut flour
1 tsp pumpkin pie spice
1/2 banana, mashed
1 TBS honey
Set oven to 350 and grease 8x8 glass baking dish.
In a large mixing bowl, combine all ingredients except egg whites and egg.
Mix well until a thick, doughy batter forms. Make sure all the coconut and mashed banana are not chunky.
Add egg and egg whites and mix well again until batter is not as thick.
Pour batter into baking dish and evenly smooth out.
Bake for 30 minutes on middle rack.
Allow to cool and enjoy!
