3/4 cup pumpkin puree

1 egg

1/4 cup egg whites

1 tsp vanilla extract

Pinch of salt

1/3 cup coconut flour

1 tsp pumpkin pie spice

1/2 banana, mashed

1 TBS honey

INSTRUCTIONS

  • Set oven to 350 and grease 8x8 glass baking dish.

  • In a large mixing bowl, combine all ingredients except egg whites and egg.

  • Mix well until a thick, doughy batter forms. Make sure all the coconut and mashed banana are not chunky.

  • Add egg and egg whites and mix well again until batter is not as thick.

  • Pour batter into baking dish and evenly smooth out.

  • Bake for 30 minutes on middle rack.

  • Allow to cool and enjoy!
