INGREDIENT LIST

1/2 cup coconut flour

2 large eggs

1/4 cup liquid egg whites

1/2 banana, browned

2 TBS honey

3/4 cup pumpkin puree

1 tsp pumpkin spice blend

1 tsp vanilla extract

1/2 tsp baking soda

INSTRUCTIONS

  • Set oven to 350 and line a baking sheet with parchment paper.

  • Lightly grease the parchment paper; they are soft and a tad hard to remove at the end if you do not.

  • In a large mixing bowl, combine flour, eggs and egg whites. Mix until flour is not longer clumpy, but thick. Add pumpkin puree.

  • Mash banana and then add the remaining ingredients.
    *Coconut flour absorbs quickly, so a thick dough should begin to form.

  • When all is well combined, form 8 small dough balls and then flatten out into cookie form. They will not expand much, so evenly distribute on parchment paper.

  • Bake for about 30-35 minutes.

  • Allow to cool and enjoy!
    *Feel free to store these for a later date. They go great with coffee in the morning!
