INGREDIENT LIST

 

Serves: 2

1 scoop vanilla protein powder

1 egg

3 TBS water

Pinch of sea salt

1 tsp vanilla extract

1 tsp pumpkin spice

1/4 cup pumpkin puree

1/4 cup almond flour/meal

 

INSTRUCTIONS

  • Very lightly grease skillet with coconut oil spray or oil.

  • Mix all dry ingredients including protein, sea salt, pumpkin spice and almond flour.

  • Add wet ingredients and mix well until smooth, thin batter is formed.

  • Using 1/4th cup, make four pancakes.

  • Once they begin to cook on the outsides and bubble, flip and allow to cook on the other side.

  • Top with nut butter, pure maple syrup, honey or just eat them as is like my hubby. Enjoy!
