1 protein & 1/2 fat serving
1 scoop vanilla protein powder
3 TBS water
Pinch of sea salt
1 tsp vanilla extract
1 tsp pumpkin spice
1/4 cup pumpkin puree
1/4 cup almond flour/meal
Very lightly grease skillet with coconut oil spray or oil.
Mix all dry ingredients including protein, sea salt, pumpkin spice and almond flour.
Add wet ingredients and mix well until smooth, thin batter is formed.
Using 1/4th cup, make four pancakes.
Once they begin to cook on the outsides and bubble, flip and allow to cook on the other side.
Top with nut butter, pure maple syrup, honey or just eat them as is like my hubby. Enjoy!
