RANCH STUFFED POTATOES
One potato half
1 carb, 1 protein & 1 fat serving
1.5 lbs 95% ground beef
5 medium potatoes
1 tsp minced garlic
1 Ranch seasoning packet
1 1/4 cup shredded cheese or 5 slices Follow Your Heart
1/2 TBS olive oil
1/2 cup green onion, chopped
1 large green bell pepper
Set oven to 425 and line baking sheet with aluminum foil. Lightly with non stick spray.
Cut potatoes in half vertically and poke with a fork. Lay flat side down on baking sheet and use 1/2 TBS olive oil to lightly coat the outside.
Bake for about 30-35 minutes
While potatoes are baking, start the filling. Chop bell pepper into fajita like strips and sauté with green onion and garlic. Cook until peppers are soft.
In a separate pan, cook beef. As it begins to brown, add in cooked pepper mix.
When beef is close to browned, drain liquid and then add ranch packet. Mix into beef and peppers well until beef is fully cooked. Set aside.
When potatoes are done, flip over and lightly mash them a little flatter as if you were about to load up a baked potato.
Put 1/2 cup beef/pepper mix on each potato half and 2 TBS cheese.
Finish by placing back in oven only for cheese to melt.
