Per Heaping 1/2 Cup
1/2 fat & 1/2 carb serving
1 pint blueberries
1 lbs strawberries, cut in fourths
1-6 oz. vanilla yogurt (I used Kite Hill dairy free)
1/4 cup slivered almonds
1/4 cup cashews
3 TBS shredded coconut
1/2 TBS honey
1/2 tsp cinnamon
Dash of sea salt
Set oven to broil and lay out sheet of parchment paper.
Make granola by adding nuts, coconut, honey, cinnamon and sea salt to a bowl.
Mix until honey is well combined with nuts.
Spread out on parchment paper and bake. **This takes about 2 minutes MAX, so watch it until slightly browned.
Place blueberries, cut strawberries and yogurt into a large mixing bowl. Stir until fruit it well coated in yogurt.
Add in granola and mix one more time.
Serve immediately or store in refrigerator for later yumminess!
