SICILIAN CREAMY CHICKEN
1 chicken breast & 1/4 cup sauce
1 protein & 1 fat serving
1 lbs chicken breast
1 TBS olive oil
2 TBS butter
1/3 cup full fat coconut milk
1/3 cup chicken broth
10 cherry tomatoes, halved
1 cup spinach
2 tsp minced garlic
1/4 cup fresh basil, chopped
1 tsp salt
Begin by preparing the chicken. Take two large chicken and cut in half horizontally to have 4 thin breast.
Season chicken with salt and pepper. Heat olive oil in skillet and cook chicken until fully done on both sides.
When chicken is done, begin preparing the sauce by sautéing spinach, tomatoes, garlic and basil.
Once spinach begins to wilt, add butter and stir until melted.
Finally, add coconut milk and chicken broth and allow to simmer for about 2-3 minutes.
Pour sauce over chicken and enjoy! Goes great with Banza noodles.
