1 fat & 1/2 carb serving
1 1/2 cups cauliflower florets or 1 cup already rice cauliflower **I used frozen florets; it has more moisture after heating
1/2 sheet seaweed sheet
1 oz. salmon or fish of choice
2 TBS avocado
1 TBS coconut aminos
Either microwave for 1:30 minutes or sauté cauliflower until soft. Allow to cool.
Place in blender or food processor until riced. Skip if cauliflower is bought already riced.
Fold seaweed sheet like a piece of paper multiple times to break apart and make "chip" like squares.
Slice raw fish of choice and avocado. You can make this a veggie sushi too!
Drizzle with coconut aminos and mix rice, fish and avocado in a bowl.
You can add in seaweed in the mixture, but they make good little chips for scooping. Enjoy!
