1 1/2 c. cooked sweet potato
4 eggs
Dash of cinnamon
INSTRUCTIONS

Preheat oven to 350 and lightly grease an 8x8 casserole dish

Cut sweet potato into large cubes and place in blender.

Add eggs and cinnamon to taste

Blend until smooth and there are no visible chunks of sweet potato. It should be a puree consistency.

Pour batter into baking dish and bake for about 30-35 minutes.

When complete, allow bars to cool and then cut into 6 bars.

Store in refrigerator for up to a week.
