1 1/2 c. cooked sweet potato

4 eggs

Dash of cinnamon

 

INSTRUCTIONS

  • Preheat oven to 350 and lightly grease an 8x8 casserole dish

  • Cut sweet potato into large cubes and place in blender.

  • Add eggs and cinnamon to taste

  • Blend until smooth and there are no visible chunks of sweet potato. It should be a puree consistency.

  • Pour batter into baking dish and bake for about 30-35 minutes.

  • When complete, allow bars to cool and then cut into 6 bars.

  • Store in refrigerator for up to a week.
