Makes 70 Gnocchi
1 1/2 large sweet potatoes, cooked and peeled
1/4 cup coconut flour
1 TBS almond flour or flax meal
Pinch of sea salt
1/2 tsp garlic powder
Set oven to 350 and grease baking sheet well.
Cook sweet potato fully so it is easy to mash without skin.
Once cooked and cooled, mash sweet potato and add all ingredients.
Mix well until thick, sticky dough is formed. **these will be sticky rolling, so have "light hands."
Using half a tablespoon, scoop out gnocchi dough and form into oval shaped balls. You should get about 70.
Bake for 35 minutes and finish on broil for another 3-minutes.
Allow to cool and enjoy!
