INGREDIENT LIST

Makes 70 Gnocchi

 

1 1/2 large sweet potatoes, cooked and peeled

1 egg

1/4 cup coconut flour

1 TBS almond flour or flax meal

Pinch of sea salt

1/2 tsp garlic powder

 

INSTRUCTIONS

  • Set oven to 350 and grease baking sheet well.

  • Cook sweet potato fully so it is easy to mash without skin.

  • Once cooked and cooled, mash sweet potato and add all ingredients.

  • Mix well until thick, sticky dough is formed. **these will be sticky rolling, so have "light hands."

  • Using half a tablespoon, scoop out gnocchi dough and form into oval shaped balls. You should get about 70.  

  • Bake for 35 minutes and finish on broil for another 3-minutes.

  • Allow to cool and enjoy!
