3 ounces sweet potato, cooked
1/3 cup egg white
Dash of cinnamon
Make sure sweet potato is cooked to where it is easy enough mash.
Mash 3 ounces sweet potato with egg white and cinnamon until thick batter is formed.
Grease skillet well and form two large pancakes.
Cook until edges begin to rise and bubble up. Flip and finish cooking on the remaining side.
