3 large sweet potatoes, peeled
2 TBS olive oil
Set oven to 425 and lightly grease a baking sheet.
After peeling, heat potatoes for about 2-3 allowing them to soften slightly. This makes cutting them easier.
Cut into thin slivers, about 1/3 inch thick.
In a large mixing bowl, coat fries with olive oil.
Spread across baking sheet and sprinkle with sea salt.
Bake for about 55 minutes. Toss the fries around every 15- 20 minutes so they get cooked on both sides.
Broil for the last 5 minutes for a final crisp.
