TACO CHICKEN TENDERS
4 oz tenders or 1 chicken breast
1 protein & 1.5 fat serving
1 lbs. chicken breast
4 hard taco shells
1/2 tsp salt
2 TBS olive oil
1/2 cup shredded cheese
If you bought chicken breast, cut into chicken tender size strips. For proper portions above, you should have 8 strips from cutting chicken breast.
In a food processor or blender, blend up taco shells and salt until you get fine crumbs.
Whisk up eggs in a bowl large enough to dip tenders in and spread taco shell crumbs on a large plate.
Heat olive oil on skillet between high and medium-high temperature.
Dip chicken in egg first and then coat with crumbs.
Place on skillet and allow to fully cook on one side.
When done, flip and finish fully cooking chicken.
When chicken is getting close to done, top with cheese and cooke until melted.
