3 Meatballs & 3/4 Cup Potato Mix
1.5 protein, 1 carb & 1 fat serving
1.5 lbs 99% ground turkey
1 lbs sweet potato, peeled and diced
1 lbs cauliflower florets
1/3 cup coconut aminos
1 TBS honey
1 tsp garlic powder
1/2 tsp minced garlic
1.5 TBS olive oil
Pinch of sea salt
1 tsp dried thyme
Set oven to 350 and lightly grease either one large baking sheet or two medium.
Start by mixing garlic powder, thyme and 1/2 tsp salt into ground turkey.
Form 15 meatballs that are about golf ball size. Place on baking sheet.
If sweet potato is not already peeled and diced, do so, and toss with cauliflower, olive oil and a sprinkle of sea salt.
Bake meatballs and sweet potato/cauliflower for 30 minutes.
While food is in the oven, make teriyaki sauce by mixing coconut aminos, honey and minced garlic well. Make sure honey is not stuck to bottom of dish.
Take out meatballs and broil sweet potatoes and cauliflower for about 3-5 minutes until cauliflower is slightly browned.
Finally, in a large bowl, mix meatballs with teriyaki sauce first and then add the sweet potato/cauliflower. Enjoy!
