(2 tacos with 1/2 cup shrimp mix)
1 carb, 1 fat & 1 protein serving
1 lbs shrimp
1/4 cup olive oil
1 TBS coconut aminos
1 TBS peanut butter
1/2 tsp garlic powder
1/2 tsp cumin
1/4 tsp paprika
1/4 cup yellow onion, diced
2 cups cabbage mix
8 street size corn tortillas
In a small mixing bowl, make sauce with olive oil, coconut aminos, peanut butter and spices. Mix until well combined and peanut butter is smooth.
Put shrimp and onion in a quart or gallon size zip lock bag. Make sure shrimp is coated well with sauce and allow to marinate in refrigerator for 30 minutes to an hour.
When ready to grill, make a large foil packet to pour shrimp in. Place 2 cups of cabbage mix in foil and then pour shrimp and sauce over it. Grill until shrimp is fully cooked.
You can sauce this if you would like as well.
Remove foil pack from grill (watch out for dripping), set up your taco station and enjoy!
